I'd definitely start with Griffin-Bonnar from TUF - 1.. if that doesn't get you into MMA, nothing will!
Any of Forrest Griffin's fights, really.. he is great to watch.
I don't remember when it was from, but didn't Diego Sanchez and Josh Kosheck have a really good one not that long ago?
You can't really go wrong with WEC lightweight fights, either, they're really fun to watch more often than not.

Don Frye vs. Yoshihiro Takayama - PRIDE 21: Demolition Not the full fight here, but gives you the idea. This was just a brutal fight. I will get a list together, but the guys nailed some the of the best ever.
