I do 9 tours.
Each tour is 9 shows...8 of the tours have four "legs", consisting of an "A" show and a "B" shows, culminating in a PPV. The "A" shows have 10 matches, and the "B" shows have 5 matches. The higher ranked guys generally only appear on "B" shows against talent they severely outrank, unless its a special main event for the "B" show. I try not to book anyone scheduled for the "A" show of a leg to also be on the "B" show. When I book the next leg, I do sign any rematches necessary, or matches dictated by Apter's Hot Seat during the previous leg, then I do any title matches on that leg, then I take anyone who was left off the last leg and book them in matches before filling out the rest of the cards, to ensure that I don't have anyone (who isn't injured) out of action for more than a "week".
The only tour that deviates from this is The Great American Bash, in the middle of the year, which is 9 shows of grudge matches, title matches, etc...and is 12-15 matches a show, depending on my fed's roster.
The tours also sometimes have a theme to them, depending on the supercard.
The World title and World tag team titles are defended once during the main tour and then on PPV.
The US and Jr. Heavyweight titles are defended twice on the tours and then on the PPV.
The TV title is defended on either the "A" or "B" shows of each leg of the tour.

The Lethal Lottery Tour - 5 matches each leg are completely randomly determined
BattleBowl (PPV) - Like the old WCW concept.
The Onslaught Tour
Omni Onslaught (PPV) - The BattleBowl winner gets a World title shot at Omni Onslaught.
The Champions Tour
Contest of Champions (PPV) - 1-2 night singles tournament, winner gets a World title shot.
The Great American Bash Tour
Face to Face Tour - Heavy on the grudge matches
Face-Off (PPV) - Survivor Series
Legends Tour
Slamboree
Tag Turmoil Tour - Heavy on the tag matches
Tag Team Invitation - One night tag team tournament
Stars Collide Tour - Bigger emphasis on "big" matches
Starrcade - The biggest show of the year. Generally top face vs top heel in the main event, plus the Tag title defended against the winners of the Tag Team Invitational.
Also, I tend to utilize the GWF "supergroup" structure a fair bit...though it tends to be more "heel stables vs makeshift face alliances"...and this only a starting point for me at the beginning of each year, as I let the dice dictate where I go as the year progresses...the leader of a group bombing out can turn into a face turn as the group kicks him out, for instance.
When I started the new year, I sent Bockwinkel and Race out of the LWF for a spell because they had dominated since I began, and had Bobby Heenan bring in Rick Rude, Don Muraco and Larry Zbyszko to join his sole remaining charge, Johnny Valiant.
Well, the plan as for Larry Z & Johnny V to team up and Rude to chase the World title while Muraco chased the US title. Rude wound up kind of a choke artist and Muraco got hurt by Snuka...but Larry Zbyszko emerged as my top heel, stealing the world title away. I changed plans to reveal that this had been the masterplan all along...that everyone else was smoke and mirrors, and now when Bockwinkel returns, I am hyping the "smartest feud in wrestling" with "The Most Intelligent Man in Wrestling" vs "The Master of the Human Chess Game" while "The Brain" watches on.
